Instructions

  1. Boil Potatoes: Boil 4 ounces of diced potato until fork-tender, then drain and set aside to cool briefly.
  2. Cook Filling: In a large frying pan over medium heat, sauté ½ pound lean ground beef and ⅓ cup minced yellow onion until the beef is evenly browned. Add ½ red bell pepper and ⅓ cup frozen peas, and continue to sauté for 7 minutes or until vegetables are tender.
  3. Add Seasonings: Stir in 2 cloves minced garlic, 1 teaspoon salt, ½ teaspoon pepper, 1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon oregano, 1 teaspoon chili powder, the cooked potatoes, 1 tablespoon tomato paste, and ¼ cup beef broth. Cook while stirring until the liquid reduces. Remove from heat and let cool slightly.
  4. Prepare Dough Circles: Roll out the 2 premade pie crusts on a clean surface. Using a cookie cutter or rimmed cup about 4 inches in diameter, cut out at least 10 circles by gathering scraps, re-rolling, and cutting again.
  5. Make Egg Wash: Whisk together 2 egg whites and 2 tablespoons water in a small bowl to create an egg wash for sealing and brushing empanadas.
  6. Fill and Seal Empanadas: Place a dough circle on the work surface, spoon approximately 2 tablespoons of the cooled filling into the center. Brush the edge of one half of the dough with egg wash, fold the dough over to form a half circle, and crimp edges firmly with a fork to seal. Repeat for all empanadas.
  7. Brush and Air Fry: Brush each empanada with egg wash. Arrange empanadas in a single layer in the air fryer basket without overlapping. Air fry at 350 degrees Fahrenheit for 10 minutes, turning halfway through cooking for even browning. Work in batches if needed.
  8. Serve: Remove empanadas carefully and serve warm as a delicious snack or appetizer.
