Instructions
- Slice Zucchini: Slice your zucchini into 3 inch pieces, about the size of a french fry.
- Prepare Flour Mixture: Combine all-purpose flour, Italian seasoning, salt, and pepper in a large bowl.
- Make Egg Wash: In a separate medium bowl, whisk together the eggs and water until pale yellow and evenly mixed.
- Mix Breadcrumbs: In another bowl, combine the Italian breadcrumbs and parmesan cheese, stirring to mix.
- Coat Zucchini in Flour: Place the zucchini sticks into the flour mixture and toss gently to coat evenly. Shake off any excess flour.
- Dip in Egg: Dip each flour-coated zucchini stick into the egg wash, ensuring full coverage.
- Coat in Breadcrumbs: Roll the dipped zucchini sticks in the breadcrumb mixture, turning several times to coat thoroughly. Repeat for all zucchini sticks.
- Prepare Air Fryer Basket: Spritz the bottom of your air fryer basket with cooking spray. Place the coated zucchini in a single layer without touching.
- Spray Zucchini: Lightly spritz the top of the zucchini fries with cooking spray to promote crisping.
