Zucchini Fries

  • 2 medium zucchini, cut into 3 inch x 1/2 inch sticks

  • 1 tbsp water
  • ½ cup Italian breadcrumbs or panko breadcrumbs
  • ⅓ cup parmesan cheese, finely grated

Instructions

  1. Slice Zucchini: Slice your zucchini into 3 inch pieces, about the size of a french fry.
  2. Prepare Flour Mixture: Combine all-purpose flour, Italian seasoning, salt, and pepper in a large bowl.
  3. Make Egg Wash: In a separate medium bowl, whisk together the eggs and water until pale yellow and evenly mixed.
  4. Mix Breadcrumbs: In another bowl, combine the Italian breadcrumbs and parmesan cheese, stirring to mix.
  5. Coat Zucchini in Flour: Place the zucchini sticks into the flour mixture and toss gently to coat evenly. Shake off any excess flour.
  6. Dip in Egg: Dip each flour-coated zucchini stick into the egg wash, ensuring full coverage.
  7. Coat in Breadcrumbs: Roll the dipped zucchini sticks in the breadcrumb mixture, turning several times to coat thoroughly. Repeat for all zucchini sticks.
  8. Prepare Air Fryer Basket: Spritz the bottom of your air fryer basket with cooking spray. Place the coated zucchini in a single layer without touching.
  9. Spray Zucchini: Lightly spritz the top of the zucchini fries with cooking spray to promote crisping.
  10. Cook in Air Fryer: Cook at 385 degrees Fahrenheit for 10 minutes or until the fries are golden brown and crispy.
