  • 1 cup salsa
  • 15 oz canned corn, drained
  • 1½ cups Mexican 3 cheese blend, shredded

  • 2 tbsp freshly chopped cilantro, optional


Instructions

  1. Cook the tortellini: Bring a pot of water to a boil and cook the tortellini according to package instructions until tender. Drain and set aside.
  2. Prepare the ground beef mixture: While the tortellini cooks, heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the beef, until fully browned and no longer pink. Drain excess fat from the skillet and return it to the stove.
  3. Add spices and sauce: Stir in chili powder, garlic salt, cumin, oregano, enchilada sauce, salsa, and drained corn. Bring the mixture to a gentle simmer.
  4. Add cheese and sour cream: Mix in the shredded Mexican cheese blend and sour cream until the sauce is creamy and well combined.
  5. Combine tortellini and sauce: Add the drained tortellini to the skillet and stir gently to coat all pieces with the cheesy beef sauce.
