Description

This Buffalo Chicken recipe offers tender, flavorful chicken breasts marinated in a zesty buffalo sauce, then cooked either on the stovetop or grilled to perfection. The included glaze enhances the heat and sweetness, allowing you to customize the spice level. Perfect for sandwiches, wraps, salads, or as a main dish.

Ingredients

Scale

Chicken

  • 2-3 chicken breasts pounded thin (approx. 1 pound)
  • 3 tablespoons olive oil, divided

Buffalo Marinade

  • 1/4 cup Frank’s hot WINGS Sauce or Frank’s ORIGINAL Hot Sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Buffalo Glaze

  • Reserved marinade (after removing 1/4 cup for marinade)
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice

Instructions

  1. Prepare the marinade: Whisk together all Buffalo Marinade ingredients in a medium bowl. Measure out 1/4 cup of this mixture and combine with 2 tablespoons olive oil in a shallow dish or freezer bag.
  2. Marinate chicken: Add the chicken breasts to the marinade mixture, tossing evenly to coat. Refrigerate for at least 2 hours, up to overnight, to allow flavors to develop.
  3. Make the glaze: To the remaining marinade, whisk in 1 tablespoon honey and 1 1/2 teaspoons lime juice. Store the glaze in the refrigerator until ready to use.
  4. Bring chicken to room temperature: Remove chicken from the refrigerator and let rest at room temperature for 15-30 minutes before cooking, if time permits.
  5. Stovetop cooking option: Heat a large non-stick skillet over medium-high heat. Once hot, add the chicken breasts and cook undisturbed for 3-5 minutes until browned or blackened on one side. Flip chicken, cover, reduce heat to medium, and cook 5-7 more minutes until cooked through. Remove chicken, let rest 5 minutes before slicing. Brush with desired amount of glaze for customized heat.
  6. Grilling option: Preheat and grease grill to medium heat (375-450°F). Grill chicken undisturbed for 5-7 minutes per side until cooked through (internal temperature of 160°F). Remove from grill, rest 5 minutes, then slice and brush with glaze to taste.

Notes

  • Watch the “how to make” recipe video for step-by-step guidance.
  • The chicken is flavorful but mild without the glaze; adjust the amount of glaze to control spiciness.
  • For a different twist, toss cooked chicken with your favorite BBQ sauce.
  • This versatile chicken is fantastic in sandwiches, wraps, salads, and tacos.
  • Total time excludes marinating since marination duration may vary.
