  • 0.25 cup granulated sugar
  • 2 large eggs - room temperature
  • 0.33 cup thick applesauce
  • 2.5 teaspoon vanilla extract
  • 3 cups rolled oats

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon water or milk - plus more as needed


Instructions

  1. Caramelize the Apples: Melt the butter in a large skillet over medium-high heat. Add the peeled and diced apples, lemon juice, and light brown sugar. Stir well to combine. Cook, stirring frequently, until the apples are soft but still hold their shape, about 5-7 minutes. Remove from heat and let cool completely.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt. Set aside.
  3. Cream Butter and Sugars: In the bowl of an electric mixer, beat the room temperature butter with the light brown sugar and granulated sugar on medium speed until the mixture is light and fluffy, about 3-4 minutes.
