Description

A festive and creamy Christmas Lasagna Dessert featuring a red velvet cookie-like base, layers of cream cheese and peppermint, green vanilla pudding, and topped with whipped topping and holiday sprinkles. Perfect for holiday gatherings and easy to prepare ahead.

Ingredients

Scale

Base Layer

  • 1 box Red Velvet Cake mix
  • ½ cup butter melted
  • 1 large egg

Cream Cheese Layer

  • 16 ounces Cream Cheese
  • ½ cup confectioners sugar
  • ¼ cup crushed peppermint candies
  • ¼ cup milk
  • 8 ounces Whipped topping

Pudding Layer

  • 2 boxes Vanilla Instant Pudding 5.1 ounce boxes
  • 2 ½ cups milk
  • Green gel food coloring (5-6 drops, adjust to desired color)

Topping

  • 8 ounces Whipped topping
  • Holiday colored sprinkles

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350° F and grease a 13×9 inch baking pan to prevent sticking.
  2. Make Base Layer: In a large mixing bowl, combine the red velvet cake mix, melted butter, and egg. Using an electric mixer, blend the ingredients until well mixed. This batter will be thicker and more cookie-like than traditional cake batter.
  3. Bake Base Layer: Pour the batter evenly into the prepared baking pan and spread it out smoothly. Bake for 15 minutes, then remove from the oven and allow to cool completely for about 30 minutes.
  4. Prepare Cream Cheese Layer: In a medium bowl, beat together the cream cheese and confectioners sugar until smooth. Add ¼ cup milk and continue mixing until combined. Fold in 8 ounces of whipped topping and the crushed peppermint candies gently.
  5. Assemble Cream Cheese Layer: Spread the cream cheese mixture evenly over the cooled red velvet base. Place the pan in the refrigerator and chill for 30 minutes to set.
  6. Prepare Pudding Layer: In a large bowl, whisk together the two boxes of vanilla instant pudding with 2 ½ cups of milk until thickened. Add green gel food coloring gradually (starting with 5-6 drops) until the desired festive color is reached.
  7. Assemble Pudding Layer: Pour the green pudding evenly over the cream cheese layer. Return the pan to the refrigerator and chill for at least 2 hours until the pudding layer is fully set.
  8. Add Final Topping: Once the pudding layer is set, spread the remaining 8 ounces of whipped topping evenly over the green pudding. Decorate the top with holiday colored sprinkles for a festive finish.
  9. Serve and Store: Keep the dessert covered in the refrigerator and serve chilled. It can be stored for 3 to 4 days for best freshness.

Notes

  • You can omit the peppermint candies if preferred or substitute with mini chocolate chips.
  • Make sure the base is completely cooled before adding the cream cheese layer to prevent melting.
  • Adjust the green food coloring gradually to achieve the perfect festive shade.
  • Store the dessert covered in the refrigerator to maintain freshness for up to 3-4 days.
  • This dessert is best served chilled for optimal texture and flavor.
