Description
These festive Christmas Wreath Cookies are a crunchy, sweet holiday treat made with cornflakes and marshmallows, colored green and decorated with red candies to resemble mini wreaths. Perfect for holiday gatherings and easy to make with simple ingredients.

Cookie Base
- 1 stick butter (1/2 cup)
- 30 large marshmallows
- 6 drops green gel food coloring or 1 and 1/4 teaspoons liquid green food coloring
- 1/2 teaspoon vanilla extract
- 5 cups cornflakes
Decoration
- 1 bottle red hot candies or 1/2 cup red candy coated chocolates such as mini M&M's

Instructions
- Prepare the pan. Line a sheet pan with parchment paper or a silicone baking mat to prevent sticking and allow cookies to cool and firm up properly.
- Melt marshmallows and butter. Place the marshmallows and butter in a large microwave-safe bowl. Microwave in 30 second increments, stirring between each, until the mixture is fully melted and smooth.
- Add coloring and flavor. Stir in the green food coloring and vanilla extract until the marshmallow mixture turns an even green color and the flavor is evenly incorporated.
- Coat cornflakes. Add the cornflakes to the melted marshmallow mixture and gently stir until all the cereal pieces are evenly coated with the green marshmallow batter.
- Form the wreath cookies. Grease a 1/4 cup measuring cup with cooking spray and pack the marshmallow-coated cereal firmly into it. Turn the mixture out onto the prepared sheet pan. Use your fingers, dampened or greased with cooking spray, to create a hole in the center forming a wreath shape.
- Decorate. Place red hot candies or red candy-coated chocolates around the wreaths as decorations resembling berries.
- Cool and serve. Allow the cookies to cool completely at room temperature until firm before serving.
Notes
- If you prefer, substitute green gel food coloring with liquid food coloring; gel tends to give a more vibrant color.
- Using cooking spray on your fingers helps prevent the sticky marshmallow mixture from adhering as you form the wreath holes.
- Press candies gently into the wreath wreaths to prevent them from falling off once cooled.
- Store leftover cookies in an airtight container to maintain freshness for up to 3 days.
