A delicious and hearty side dish featuring crispy country-style ranch potatoes combined with tender green beans and smoky bacon, seasoned with classic ranch flavors and garlic powder.
Ingredients
Scale
Vegetables
- 1 lb. fresh green beans, trimmed
- 1 ½ lbs. baby Yukon gold potatoes, cut in half
Meat & Dairy
- 12 oz thick-cut bacon
- 4 tbsp butter
Seasonings
- 2 ½ tbsp ranch seasoning
- 1 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Boil Green Beans: Bring a medium pot of water to a boil, add the green beans and cook until bright green and tender, about 5 minutes. Remove with a slotted spoon and plunge into ice water to stop cooking.
- Cook Potatoes: After removing green beans, add the potatoes to the boiling water and cook until fork-tender, about 10 minutes. Drain carefully.
- Cook Bacon: While potatoes cook, heat a large skillet over medium-high heat and cook bacon pieces until browned and crispy. Remove bacon with a slotted spoon and set aside on paper towels.
- Brown Potatoes: Add the drained potatoes to the skillet with bacon drippings. Stir frequently and brown potatoes on all sides over medium-high heat.
- Add Flavorings: Reduce heat to medium, add butter, green beans, ranch seasoning, and garlic powder to the skillet. Stir to evenly coat everything.
- Combine and Season: Return bacon to the skillet, stir to combine, and season with salt and pepper to taste. Serve warm and enjoy.
Notes
- For extra crispiness, you can roast the potatoes before adding to the skillet.
- Use low-sodium bacon or adjust salt to control sodium content.
- Fresh green beans work best, but frozen can be used if thawed and drained.
- Ranch seasoning can be homemade or store-bought for convenience.
- Leftovers keep well and can be reheated in a skillet or oven to retain crispness.
