- 2 tablespoons butter, divided
- 1 tablespoon olive oil
- 3–4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup chicken broth
- 2 cups heavy cream
- 4 tablespoons parsley, finely chopped
- 1/2 cup Parmesan cheese, freshly grated
- 1 1/2 tablespoons lemon juice
Instructions
- Cook Pasta: Bring a pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.
- Prepare Chicken: Pound the chicken breasts to an even thickness of 1 inch using a meat mallet or rolling pin. Season both sides with 1 tablespoon of Cajun seasoning, smoked paprika, and pepper to taste.

- Simmer Sauce: Bring the sauce to a gentle boil, add parsley, and slowly stir in grated Parmesan cheese. Stir continuously until the cheese melts completely and forms a smooth cream sauce.
- Season Sauce: Add the remaining 1 tablespoon Cajun seasoning, lemon juice, and pepper to taste. Simmer the sauce for about 5 minutes until it thickens to desired consistency.
- Combine Pasta and Sauce: Add the cooked fettuccine back into the skillet, tossing to coat the pasta fully with the cream sauce.
