A delicious and easy recipe for Crispy Feta Fried Eggs served on a warm tortilla with smashed avocado, garnished with pickled onions and chili oil. Perfect for a savory breakfast or light meal with a crispy, cheesy crust and creamy avocado.

- 1 large egg
- ¾ oz / 20 g feta cheese
- 1 small tortilla or slice of toasted bread
- ¼ avocado
Seasonings and Garnishes
- Dried oregano
- Red pepper flakes
- Cooking oil spray or olive oil spray
- Lemon juice, to taste
- Pickled onions, for garnish
- Chili oil, for garnish
Instructions
- Prepare the pan: Spray a small frying pan or skillet lightly with cooking oil spray. Crumble the feta cheese evenly on the pan, making sure to spread it around the outside edge to cover the circle of the pan.
- Melt the feta: Heat the pan over medium heat for a couple of minutes, allowing the feta to sizzle and begin to melt without burning, forming a crispy golden crust.
- Cook the egg: Crack the egg gently into the center of the pan on top of the melting feta. Sprinkle dried oregano and red pepper flakes over the egg and cook until the egg reaches your preferred doneness, whether that be medium or with a runny yolk.
- Warm the tortilla: Heat the tortilla on a gas stove, in the oven, or microwave until warmed through. Smash the avocado and spread it on top of the warm tortilla. Squeeze lemon juice over the avocado for freshness and flavor.
- Assemble the dish: Once the egg is cooked and the feta has formed a crispy crust, carefully lift the egg and feta crust out of the pan with a spatula and place it on top of the avocado-covered tortilla.
- Garnish and serve: Top with pickled onions and drizzle chili oil over the top. Serve immediately and enjoy your Crispy Feta Fried Eggs!
