Instructions
- Preheat and boil potatoes: Preheat your oven to 400 degrees Fahrenheit. Bring a large pot of salted water to a boil, then add the potatoes and cook for 12 minutes or until fork-tender.
- Drain and smash potatoes: Drain the potatoes and let them cool briefly. Using a flat surface like a spatula or the bottom of a glass, gently smash each potato piece without breaking it apart completely.
- Prepare baking sheets: Drizzle olive oil over two baking sheets and place them in the oven for 2 to 3 minutes to heat the oil.
- Arrange and season potatoes: Remove baking sheets from the oven and carefully place the smashed potatoes onto the oiled sheets. Generously sprinkle the breakfast potato seasoning mix over the potatoes.
- Bake potatoes: Bake the potatoes for 15 minutes, then flip them over and season again with more seasoning. Return to the oven and bake for an additional 15 minutes or until the potatoes are golden brown and crispy. For extra crispiness, bake up to 25 minutes.
- Garnish and serve: Remove potatoes from the oven and garnish with freshly chopped scallions. Serve warm alongside eggs or your favorite breakfast protein.
