Ingredients
Scale
Salmon Bites
- 1 pound salmon fillet - boneless and skinless, cut into 1 to 1½-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon cornstarch (optional)
Teriyaki Glaze
- ½ cup teriyaki sauce
- 1 teaspoon brown sugar or honey
- 1 teaspoon fresh ginger - grated
Instructions
- Preheat the air fryer: Preheat your air fryer to 400°F to ensure even cooking and crispy salmon bites.
- Dry the salmon: Lay paper towels on a plate and place the salmon cubes on top. Gently pat them dry to remove excess moisture, which will help achieve a crispier texture.
- Season the salmon: Discard the paper towels. Drizzle the salmon with olive oil, then sprinkle garlic powder, onion powder, salt, and pepper evenly. Toss to coat all pieces. If using, sprinkle cornstarch over the salmon and toss again until lightly coated.
- First air fry: Lightly spray the air fryer basket with nonstick spray. Arrange the salmon cubes in a single layer to cook evenly. Air fry for 4 minutes.
- Prepare the glaze: While the salmon is cooking, warm the teriyaki sauce in a microwave-safe bowl. Stir in the brown sugar or honey and grated fresh ginger until combined.
- Glaze the salmon: Remove the salmon from the air fryer and brush each piece with the teriyaki glaze. Flip the salmon bites, and brush the other side thoroughly with the glaze.
- Finish air frying: Return the glazed salmon to the air fryer and cook for an additional 3 minutes, or until the bites are crispy and cooked through (internal temperature between 125-135°F for medium, or 145°F for well done).
- Serve: Garnish with chopped green onions and sesame seeds if desired, and serve over white rice with extra teriyaki sauce on the side.
Notes
- Yield based on 1 pound of salmon makes about 3 servings as a main dish, or 4 servings as an appetizer.
- To avoid cross-contamination, reserve some teriyaki glaze in a clean bowl before brushing the raw salmon, or prepare a separate batch for serving.
- This recipe is naturally dairy-free.
- For a gluten-free version, use gluten-free teriyaki sauce or homemade sauce with tamari.
- Store cooled salmon bites in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
