Description

This Fancy Christmas Cakes recipe features rich, buttery whipped frosting made from butter, vanilla, confectioners' sugar, milk, and a pinch of salt. It's a perfect creamy filling for your holiday cakes, offering a smooth texture and delightful vanilla flavor, ideal for festive celebrations.

Ingredients

Scale

Whipped Filling

  • 1/2 cup (1 stick or 113g) butter, softened
  • 1 tsp McCormick® Pure Vanilla Extract
  • 16 oz confectioners' sugar, sifted
  • 2 tbsp 2% or whole milk
  • Pinch salt

Instructions

  1. Beat the Butter. Beat the butter in the bowl of a stand mixer with the whisk attachment on medium-high speed until the butter becomes light and fluffy, approximately 3 minutes.
  2. Add Vanilla Extract. Add the vanilla extract to the whipped butter and mix briefly to combine.
  3. Incorporate Sugar and Milk. With the mixer running on low speed, slowly add the sifted confectioners’ sugar, milk, and pinch of salt while frequently scraping down the sides and bottom of the bowl to ensure even mixing.
  4. Whip the Frosting. Once the ingredients are incorporated, increase the mixer speed to medium-high or high and whip the frosting for at least 3 minutes; continuing up to 7 minutes will create a fluffier texture.
  5. Adjust Consistency. If the frosting is too thick to spread, gradually beat in additional milk, one tablespoon at a time, until you reach the desired spreading consistency.
  6. Store Properly. Store the whipped frosting in the refrigerator for up to 2 weeks. Before using, rewhip the frosting to restore its smooth texture and fluffiness.

Notes

  • For a delicious base cake, use the recommended White Cake recipe to bake from scratch.
  • Ensure the butter is properly softened to room temperature before starting to achieve a smooth and fluffy frosting.
  • Sifting the confectioners' sugar prevents lumps and results in a smoother texture.
  • If storing frosting in the fridge, allow it to sit briefly at room temperature before rewhipping to make it easier to achieve a fluffy consistency again.
  • This frosting works well as a filling or a light cake topping during the holiday season.
