For the Stir Fry:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup sugar snap peas
  • 3 green onions, sliced

For the Sauce:

  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons sriracha
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper


Instructions

  1. Cook the Chicken: In a large skillet over medium-high heat, drizzle 1 tablespoon of olive oil to coat the pan. Once the pan is hot, add the chicken pieces in an even layer. Season with salt and pepper and cook until lightly browned and cooked through, about 5 minutes, stirring occasionally to ensure even cooking. Transfer the cooked chicken to a plate and set aside.
  2. Cook the Vegetables: Drizzle the remaining tablespoon of olive oil into the hot skillet. Add the sliced red and yellow bell peppers along with the sugar snap peas. Stir frequently and cook the vegetables until they are tender-crisp, approximately 5 minutes.
  3. Prepare the Sauce: While the vegetables are cooking, whisk together in a small bowl the soy sauce, honey, sriracha, tomato paste, apple cider vinegar, sesame oil, minced garlic, crushed red pepper flakes, and black pepper. Set this flavorful firecracker sauce aside.
  4. Combine and Simmer: Return the cooked chicken to the skillet with the vegetables. Pour the prepared firecracker sauce over the mixture. Stir well to coat all ingredients evenly. Bring the sauce to a boil, then reduce the heat and simmer until the sauce thickens slightly and everything is well incorporated, about 3-4 minutes.
