Description

A refreshing Frozen Peach Daiquiri made with frozen peaches and pineapple, fresh mint, lime juice, and a touch of maple syrup, blended to smooth perfection. Optional light rum adds a boozy kick for a perfect summer cocktail or mocktail.

  • 1 cup frozen sliced peaches
  • 1/2 cup frozen pineapple chunks
  • 1 Tbsp fresh mint leaves
  • 2 Tbsp lime juice, freshly squeezed
  • 1/3 cup ice
  • 2/3 cup water
  • 1/2 Tbsp maple syrup
  • 4 Tbsp light (white) rum (optional)


Instructions

  1. Prepare Ingredients: Gather all ingredients including frozen sliced peaches and pineapple chunks, fresh mint leaves, freshly squeezed lime juice, ice, water, maple syrup, and light rum if using.
  2. Blend the Daiquiri: Add all ingredients into a high-speed blender, starting with the 1/2 tablespoon of maple syrup and 4 tablespoons of rum, if using. Blend on high for about 1 minute until the mixture is smooth and creamy.
  3. Taste and Adjust: Taste the daiquiri and adjust sweetness by adding more maple syrup if it’s too tart or more rum if you desire a stronger cocktail flavor. Blend again briefly to incorporate changes.
  4. Serve: Pour the daiquiri evenly into two cocktail glasses. Garnish the rims with a slice of peach or pineapple, a lime wedge, or fresh mint leaves to enhance aroma and presentation.
  5. Enjoy: Serve immediately to enjoy the freshest flavor and best texture. If you have any leftovers, consider freezing them in popsicle molds for a cool treat later.

Notes

  • Freeze fresh fruit at peak ripeness for best flavor and color; peaches should be fragrant and slightly soft, pineapple flavorful and bright yellow.
  • To freeze fruit, cut unpeeled peaches into 1/2-inch slices and pineapple into 1 1/2-inch chunks, freeze on a lined baking sheet for 4-6 hours, then transfer to a sealed container.
