Ingredients
Scale
Cheese Base
- 13 ounces Alouette Garlic & Herbs Soft Spreadable Cheese (or herbed cream cheese or herbed goat cheese)
Coatings
- ⅓ cup roasted pistachios, finely chopped
- ½ cup dried cranberries, finely chopped
Optional Garnish
- Rosemary sprigs
Instructions
- Prepare the Cheese Balls: Line a large plate with parchment paper. Using a 1-ounce cookie scoop (2 tablespoons), scoop out balls of cheese and place them on the prepared plate. Repeat until all cheese is portioned. Freeze the cheese balls for 20 minutes to firm up.
- Prepare the Coatings: Place the chopped pistachios and chopped dried cranberries each on separate small plates or shallow bowls for coating.
- Roll the Cheese Balls: Remove the cheese balls from the freezer. Use your hands to gently roll each scoop into smooth round balls. Roll half of the cheese balls in the chopped pistachios and the other half in the chopped cranberries until fully coated.
- Presentation and Storage: Arrange the truffles on a serving platter. Optionally, garnish the rim with rosemary sprigs. Serve immediately or refrigerate until ready to enjoy.
Notes
- Store truffles well-covered in the refrigerator for up to 3 days to maintain freshness.
- To keep nut-free, coat all the cheese balls with dried cranberries or explore other coating options.
- For a dairy-free or vegan version, substitute with a firm, spreadable dairy-free or vegan cheese that is not overly soft.
