  • 16 ounces mini marshmallows, divided
  • 1 teaspoon pure vanilla extract
  • 6 cups rice krispies cereal
  • 1 ¼ cups holiday M&M's, divided
  • ¼ cup holiday sprinkles
  • 5 ounces Ghirardelli white chocolate melting wafers, melted (1/2 bag)


Instructions

  1. Prepare Baking Dish: Line a 9-inch square baking dish with parchment paper and set it aside to make cleanup easy and to prevent sticking.
  2. Melt Butter and Marshmallows: In a large saucepan over medium heat, melt 6 tablespoons salted butter. Once melted, add all but 1 cup of the mini marshmallows. Reduce heat to low and continuously stir until the marshmallows are completely melted and smooth.
  3. Add Vanilla and Cereal: Remove the saucepan from heat and stir in 1 teaspoon pure vanilla extract. Then add 6 cups rice krispies cereal along with the remaining 1 cup mini marshmallows. Gently stir until all ingredients are combined evenly without crushing the cereal.
  4. Mix in M&M's and Sprinkles: Fold in 1 cup of holiday M&M's and all of the ¼ cup holiday sprinkles carefully into the mixture to distribute color and flavor throughout.
  5. Press Into Pan and Decorate: Pour the mixture into the prepared baking dish. Using your fingertips, gently press the mixture just enough to spread it evenly without compacting it too much. Drizzle with the melted white chocolate and sprinkle the remaining ¼ cup holiday M&M's and an optional pinch of extra sprinkles on top for decoration.
  6. Set and Serve: Allow the treats to set at room temperature for one hour until firm. Once set, cut into squares and serve.

Notes

  • Use any variety of holiday M&M’s you prefer; milk chocolate or peanut butter are great options, though peanut butter may add extra crunch.
  • For best texture, use fresh marshmallows and rice krispies cereal since stale ingredients cause stale treats.
  • Jimmies (log-shaped sprinkles) are preferred for softness and visual appeal, but quins (flat circle or shaped sprinkles) are also suitable. Avoid nonpareils to maintain texture.
