  3. Bring to Rolling Boil: Allow the mixture to come to a rolling boil. Monitor the temperature with a candy thermometer closely.
  4. Add Coloring: When the thermometer reads 260 degrees Fahrenheit, add the food coloring. Do not stir—let the boiling motion mix it.
  5. Boil to Hard Crack Stage: Continue boiling until the temperature reaches 300 degrees Fahrenheit, then remove the pan from heat and let the boiling subside without stirring.
