Description

A refreshing homemade Honey Ginger Lemonade combining the zesty brightness of freshly squeezed lemon juice with a soothing honey ginger simple syrup, served chilled with fresh mint leaves.

Honey Ginger Simple Syrup

  • 1/3 cup honey
  • 1 cup water
  • 1 medium piece of fresh ginger, peeled and sliced

Lemonade

  • 1 1/2 cups freshly squeezed lemon juice (preferably Meyer lemons)
  • 4 cups water
  • Fresh mint leaves


Instructions

  1. Make the honey ginger syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, remove from heat, add 1/3 cup honey and sliced ginger, then let it steep for 20 minutes to infuse the flavors.
  2. Prepare the lemonade base: While the syrup is steeping, juice the lemons until you have 1 1/2 cups of fresh lemon juice. Pour this juice into a large pitcher and add 4 cups of cold water and ice.
  3. Combine and strain: Strain the honey ginger syrup to remove ginger slices, then add the syrup to the lemon water mixture and stir well to combine.
  4. Garnish and serve: Add fresh mint leaves to the pitcher for aroma and flavor. Refrigerate the lemonade to chill further, or serve immediately over ice for a refreshing drink.

Notes

  • Use Meyer lemons for a sweeter, less acidic lemonade or regular lemons for a more tart flavor.
  • Adjust the amount of honey in the syrup for desired sweetness.
  • Fresh ginger can be replaced with ground ginger at 1/4 teaspoon if fresh is not available, but fresh is preferred.
  • The syrup can be stored in the refrigerator for up to one week.
  • For a fizzy version, replace some or all of the water with sparkling water before serving.
