Description

This Easy Layered Taco Bake is a delicious and simple Mexican-inspired casserole featuring seasoned ground beef, layers of soft flour tortillas, and melted Mexican cheese blend. Perfect for a quick weeknight dinner, this flavorful dish is baked to bubbly perfection and can be topped with your favorite garnishes like sour cream and tomatoes.

Ingredients

Scale

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 3/4 cup water (as called for on seasoning packet)
  • 1/2 cup salsa con queso

Layers

  • 3 (8-inch) flour tortillas
  • 2 cups shredded Mexican cheese blend (divided use)

Instructions

  1. Brown the beef: In a skillet over medium heat, brown and crumble 1 pound of ground beef until fully cooked. Drain any excess grease carefully.
  2. Season the meat: Add 1 packet taco seasoning and 3/4 cup water (or as directed on the seasoning packet) to the beef. Stir and cook according to the seasoning packet instructions until the mixture thickens and is well combined.
  3. Mix in salsa con queso: Turn off the heat and stir in 1/2 cup salsa con queso thoroughly into the seasoned beef mixture.
  4. Preheat oven and prepare pan: Preheat your oven to 350 degrees Fahrenheit. Spray an 8-inch round baking pan with nonstick cooking spray to prevent sticking.
  5. Assemble the layers: Place one flour tortilla at the bottom of the prepared pan. Spread one third of the taco beef mixture evenly over the tortilla. Sprinkle one third of the shredded Mexican cheese blend on top. Repeat the layering process two more times, ending with cheese on top.
  6. Bake the taco bake: Place the assembled bake in the preheated oven and bake for 20 minutes until the cheese is melted, bubbly, and slightly golden around the edges.
  7. Cool and serve: Remove from oven and let it cool for a couple of minutes. Slice into wedges and serve with your favorite toppings such as sour cream, diced tomatoes, or guacamole.

Notes

  • If the salsa con queso is too spicy, substitute with a mild cheese dip to suit your taste.
  • For extra flavor, you can add diced onions or bell peppers to the ground beef while cooking.
  • This dish can be doubled easily by using a larger baking dish and increasing ingredients proportionally.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven or microwave.
