Description

A refreshing Pineapple Rum Punch cocktail combining tropical pineapple juice, smooth coconut rum, zesty lime, and fizzy lemon-lime soda, perfect for summertime relaxation or entertaining guests.

Ingredients

Scale

Main Ingredients

  • 3/4 cup pineapple juice
  • 1/3 cup coconut rum (e.g., Malibu Original)
  • 1/2 cup lemon-lime soda
  • 1/8 cup fresh lime juice
  • 1/8 cup simple syrup

Garnish

  • Fresh pineapple skewer
  • Ice cubes

Instructions

  1. Combine Ingredients: In a cocktail shaker or large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine all ingredients thoroughly.
  2. Prepare Glasses: Fill two 12 oz. low-ball cocktail glasses about 3/4 full with ice cubes to keep the drink chilled without diluting it too quickly.
  3. Pour Punch: Pour half of the cocktail mixture into each glass, approximately 1 cup per glass, directly over the ice cubes.
  4. Garnish and Serve: Garnish each glass with a skewer of fresh pineapple pieces for an inviting tropical touch and serve immediately.

Notes

  • You can store any leftover punch in the refrigerator for up to 24 hours, but the ice will melt and dilute the drink, and the soda will lose its carbonation.
  • If you don't enjoy the coconut flavor, substitute the coconut rum with white/clear rum or spiced rum; these alternatives blend well with the pineapple juice.
  • Mini 6 oz. cans of pineapple juice are convenient for this recipe since 6 oz. equals 3/4 cup, avoiding opening a large bottle for a small batch.
  • This recipe can easily be doubled or tripled to serve more guests.
  • Add ice only when ready to serve to prevent dilution of the punch.
  • Lemon-lime soda can be swapped with ginger ale or lemon-lime sparkling water for a different flavor profile.
  • Keep simple syrup on hand for cocktails; it can be homemade by dissolving equal parts granulated sugar and water over medium heat without boiling. Cool and refrigerate for up to two weeks.
