Steak Bites
- 2-14 oz strip steaks
- 2 tbsp avocado oil
- 4 tbsp unsalted butter
- 4 cloves garlic minced
- 1 medium jalapeño thinly sliced
Cajun Seasoning
- 2 tbsp smoked paprika
- 2 tbsp kosher salt
- 2 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp cayenne powder
- 1 tbsp red pepper flake
- 1 tbsp fine ground black pepper
- 1 tbsp white pepper
- 1 ½ tbsp oregano
- 2 tsp hot paprika
Instructions
- Slice the steak: Cut the strip steaks into roughly 3/4 inch size pieces to create uniform steak bites that cook evenly.
- Mix the seasoning: In a small bowl, combine all the Cajun seasoning ingredients thoroughly to ensure a balanced spicy flavor.
- Season the steak bites: Place the steak pieces into a mixing bowl and toss with one tablespoon of avocado oil until evenly coated. Add two tablespoons of the Cajun seasoning and mix well until all bites are evenly seasoned. Set aside.
- Sear the steak bites: Heat one tablespoon of avocado oil in a large skillet over high heat until the oil is shimmering and just starting to smoke. Add the steak bites and stir frequently to sear all sides of the meat evenly. Cook for 3 minutes total. Remove the steak bites from the skillet and place them on a plate. Turn the heat to low and let the pan cool for about 2 minutes.
- Make the butter sauce: Add the unsalted butter to the skillet and let it melt completely. Add the minced garlic and use a wooden turner to scrape up all the crispy bits from the bottom of the pan. Then add the sliced jalapeños and cook for about 2 minutes until fragrant.
- Combine steak and sauce: Return the steak bites to the skillet and toss them with the butter, garlic, and jalapeño sauce to coat the meat thoroughly and soak up the flavors.
- Serve: Plate the steak bites and pour any remaining butter sauce over the top before serving for maximum flavor.
Notes
- For maximum flavor, avoid just grill marks and instead sear the whole steak bite to achieve an overall char and deep Maillard reaction flavor.
- Cutting the steak into bite-size pieces increases the surface area for charring and intensifies the flavor.
- If you prefer less spice, reduce the amount of cayenne powder and red pepper flakes to taste.
