Description

A spicy dill pickle margarita that combines tequila, dill pickle brine, and a zesty hot honey for a bold, refreshing cocktail with a Tajin-rimmed glass and sparkling water finish.

Ingredients

Scale

For the Margarita

  • 2 oz tequila
  • 1 oz dill pickle brine
  • 1 oz Cointreau
  • 1/2 oz lime juice
  • 1 tbsp hot honey (use to taste)
  • sparkling water, to top
  • mini dill pickles, to garnish

For the Rim

  • Tajin, for the rim

For the Hot Honey (optional)

  • 1/2 cup honey
  • 1/4 cup hot sauce (e.g., Frank's)
  • 1 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp red pepper flakes

Instructions

  1. Prepare the Rim: Brush the rim of your cocktail glass with honey. Pour 1-2 tablespoons of Tajin seasoning on a shallow plate, then dip and roll the glass rim into the Tajin, shaking off any excess.
  2. Mix the Cocktail: In a shaker, combine the tequila, dill pickle brine, Cointreau, lime juice, and hot honey. Add ice and shake vigorously until the mixture is chilled.
  3. Assemble the Drink: Strain the cocktail into the prepared glass. Top it off with sparkling water for a refreshing finish.
  4. Garnish: Add mini dill pickles as a garnish to enhance the presentation and flavor.
  5. Make Hot Honey (optional): In a small saucepan, combine honey, hot sauce, cayenne pepper, garlic powder, onion powder, and red pepper flakes. Heat over medium heat for 1-2 minutes, stirring until all granules dissolve. Store in an airtight container for up to two weeks at room temperature or longer in the refrigerator.

Notes

  • Adjust the amount of hot honey to your preferred spice level for a milder or spicier cocktail.
  • The hot honey can be prepared in advance and stored to save time when mixing the cocktail.
  • Tajin adds a tangy, spicy rim that complements the pickle flavor—substitute with chili powder mixed with salt if unavailable.
  • Use quality tequila for best flavor, preferably blanco or reposado.
  • The sparkling water adds a light fizz; you can omit it for a stronger drink.
