A delicious and hearty Croissant Breakfast Sandwich featuring creamy salsa-spiked cream cheese, savory turkey sausage patties, perfectly cooked eggs, fresh arugula, and spicy green chiles sandwiched inside flaky croissants.

Salsa Cream Cheese Spread
- 4 oz cream cheese, softened
- 2 tbsp salsa (your favorite)
- Salt and pepper, to taste
Sausage and Eggs
- 8 Jones Dairy Farm All Natural Golden Brown Turkey Sausage Patties
- 1 tbsp olive oil (optional)
- 4 large eggs
- Salt and pepper, to taste
- 1/4 cup canned green chiles
Assembly
- 1 cup arugula
- 4 large croissants, split in half
Instructions
- Prepare the salsa cream cheese spread: In a small bowl, combine 4 ounces of softened cream cheese and 2 tablespoons of your favorite salsa. Mix thoroughly until smooth and well incorporated. Season with salt and pepper to taste.
- Cook the turkey sausage patties: Heat a large non-stick skillet over medium-high heat. Add the 8 turkey sausage patties and cook for about 2-3 minutes on one side until golden brown. Flip and cook another 2-3 minutes until the patties are golden and warmed through. Remove from the skillet and set aside.
- Cook the eggs: If using olive oil, add 1 tablespoon to the same skillet and heat until hot. Crack 4 large eggs into the skillet, spacing them apart. Season with salt and pepper. For sunny-side up, allow the eggs to set and then spoon hot oil over the egg whites to finish cooking them gently. Alternatively, flip the eggs to cook them over-easy or over-medium as preferred.
- Assemble the sandwiches: Spread the salsa cream cheese evenly on the inside of all croissant halves. On each bottom half, layer arugula, then top with two sausage patties, followed by a cooked egg. Sprinkle canned green chiles over the eggs. Cover with the top halves of the croissants and serve immediately.
Notes
- You can substitute turkey sausage patties with vegetarian sausage patties for a vegetarian option.
- If you prefer spicier sandwiches, add extra green chiles or a few dashes of hot sauce.
- Use whole grain or gluten-free croissants to accommodate specific dietary needs.
- To save time, prepare the salsa cream cheese spread and slice croissants the night before.
- If cooking multiple sandwiches, keep cooked sausage and eggs warm in a low oven while assembling.
