Description

Polish Tomato Rice Soup, or Pomidorowa z Ryzem, is a comforting traditional soup made with a flavorful tomato base, tender rice, and aromatic vegetables. This quick and easy recipe combines tomato paste, fresh vegetables, and spices to create a hearty and warming bowl of soup perfect for any season.

Ingredients

Scale

Vegetables

  • 1 small onion, finely chopped
  • 1/2 small leek, finely chopped
  • 1 carrot, peeled and finely grated

Soup Base and Seasoning

  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1/2 teaspoon allspice powder
  • 5 tablespoons tomato paste
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Other

  • 1/2 cup short-grained rice
  • 4 1/4 cups vegetable or chicken stock

Instructions

  1. Prepare Vegetables: In a large pot over medium heat, heat 2 tablespoons of olive oil. Add the finely chopped onion, leek, and grated carrot and saute until the vegetables are softened and translucent, about 4 to 5 minutes.
  2. Add Spices and Tomato Paste: Stir in the bay leaf, 1/2 teaspoon of allspice powder, and 5 tablespoons of tomato paste, mixing well to combine all flavors evenly.
  3. Add Rice and Stock: Pour in 1/2 cup of short-grained rice and 4 1/4 cups of vegetable or chicken stock. Stir briefly.
  4. Cook Soup: Bring the mixture to a boil, then reduce heat to a simmer. Cook gently until the rice is tender and fully cooked, about 15 minutes. Stir occasionally to prevent sticking.
  5. Season and Serve: Remove the bay leaf, season with kosher salt and freshly cracked black pepper to taste. Serve the soup warm and enjoy your comforting Polish Tomato Rice Soup.

Notes

  • Use short-grain rice for the best texture, as it becomes tender but doesn’t break apart easily.
  • If you prefer a vegetarian option, use vegetable stock instead of chicken stock.
  • Adjust the amount of tomato paste according to your preference for tomato intensity.
  • For a smoother texture, blend part of the soup after cooking and mix it back in before serving.
  • This soup pairs wonderfully with crusty bread or a side salad.
