Instructions
- Prepare Vegetables: In a large pot over medium heat, heat 2 tablespoons of olive oil. Add the finely chopped onion, leek, and grated carrot and saute until the vegetables are softened and translucent, about 4 to 5 minutes.
- Add Spices and Tomato Paste: Stir in the bay leaf, 1/2 teaspoon of allspice powder, and 5 tablespoons of tomato paste, mixing well to combine all flavors evenly.
- Add Rice and Stock: Pour in 1/2 cup of short-grained rice and 4 1/4 cups of vegetable or chicken stock. Stir briefly.
- Cook Soup: Bring the mixture to a boil, then reduce heat to a simmer. Cook gently until the rice is tender and fully cooked, about 15 minutes. Stir occasionally to prevent sticking.
