Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a 13×9 inch baking pan with parchment paper, making sure the parchment extends up the sides to create overhangs for easy removal.
  2. Make the Crust: Using a stand or electric hand mixer, cream the room temperature unsalted butter and granulated sugar together until light and fluffy, about 3 minutes.
  3. Combine Dry Ingredients: In a separate bowl, mix the all-purpose flour and salt. With the mixer on low speed, add the flour mixture to the butter mixture until just combined.
  4. Form the Crust: Flour your hands well to prevent sticking and transfer the dough into the prepared baking pan. Gently press into an even layer, building up a ½-inch edge along the sides of the pan.
  5. Bake the Crust: Bake the crust in the preheated oven for 20 minutes or until it starts to turn golden brown. Remove from oven and allow it to cool while leaving the oven on.
  6. Prepare the Filling: In a bowl, whisk together the eggs, granulated sugar, lemon zest, lemon juice, and all-purpose flour until smooth and well combined.
